Potato salad

Ingredients (4 servings)

– 1 lb (500 g) small red potatoes, diced 
– 2 tsp (10 ml) chopped parsley or celery leaf 
– 1/2 tsp (2 ml) sugar or maple syrup
– 1 tsp (5 ml) salt
– Black pepper
– 1/2 cup (125 ml) 35% cream
– 1 tbsp (15 ml) dijon mustard
-1 tbsp (15 ml) fresh lemon juice or apple vinegar
– 2 medium red apples
– 2 stalks of sliced celery
– 1/4 cup (50mg) chopped green onions
– Walnuts
– Crumbled Canadian Blue
– Cheese or Feta

 

Choose organic products, especially to use peels in another recipe!

Instructions

  1. Peel the potatoes and put the potato skins aside for the other recipe.
  2. ln a covered saucepan, simmer the potatoes until tender (7 to 12 minutes), let it cool.
  3. ln a small bowl, whisk the next seven ingredients.
  4. Dice the apples and pour into a large bowl, adding the cooled potatoes, celery and green onion.
  5. Pour the creamy dressing over the potato mixture and stir.
  6. Sprinkle with walnuts and cheese.

Potato skin chips

Potato peel

You can do the same with apple peel and cinnamon powder for a sweet little dessert.

Instructions

1. Wash the potato skins thoroughly. Dry them well so that the chips can be really cripsy.
2. ln a bowl, mix the potato skins with oil, the smoked paprika, salt and pepper (spices of your choice!).
3. Spread out evenly on a baking sheet covered with silicone or baking paper.
4. Roast for 20 minutes at 400°F /200°C.
5. Stir the potato skins while it cooks.
