It’s time to plan the Christmas meal!
If you’re running out of ideas, we have a vegetarian recipe for you: meatloaf!
The first 2 minutes are helpful to understand why it is beneficial for the environment to eat vegetarian. And most importantly, remember, listen to yourself and take the “smallest step possible” for yourself.

Ingredients:
- 1 ½ cups brown rice
- 1 ½ cups walnuts
- ½ cup cashew
- 1 yellow onion
- 3 garlic cloves
- 3 oz shiitake mushrooms
- 3 oz cremini mushrooms
- 2 tbsp fresh parsley
- 2 tbsp olive oil
- 1 tsp dry thyme
- 1 tsp dry marjoram
- 1 tsp dry sage
- 4 large eggs
- 1 cup cottage cheese
- 12 oz swiss cheese
- 1 tsp kosher salt
- ½ tsp fresh ground pepper
Preparation:
- Cook the brown rice
- Preheat the oven at 375 degrees Fahrenheit
- Place the nuts on the baking sheet and roast for 8-10 minutes until golden brown. Let them cool.
- In the meantime, finely chop the onions and garlic. Clean and finely chop the mushrooms and fresh parsley. When the nuts are cool, finely chop with a knife or food processor.
- In a large skillet, add the olive oil, the onions and garlic and cook for approximately 3 minutes. Add the mushrooms, marjoram, thyme and sage. Cook for approximately 5 minutes or until the mushrooms are golden brown. Transfer to a large bowl.
- In a small bowl, beat the eggs.
- Add all of the ingredients to the mushroom mix.
- Cover the inside of a 9 inch cooking dish with parchment paper. Coat with butter and pour the mix in.
- Cook for approximately 1 hour or until the loaf is golden brown. Let it cool for 20 minutes and flip it over to take it out of the dish. Slice it and serve warm.
